Good King Henry- harvesting?

If you haven't tried growing GKH- it is a perennial leafy clump similar to spinach. The leaves are good in salad.

My question is... two sources regarding harvesting suggest 'harvesting the shoots when aprox 5", peeling them, then boiling like asparagus'.

Mine never produce anything you could actually peel. And this is their 3rd year, still just clumps of spinach-like foliage.

Well fed, full sun, plenty of moisture. How do I get shoots big enough to peel??
