To till or not to till

I've read some interesting books and articles on no-till gardening. Basically, they say that by tilling you deplete the soil of nutrients (gases are released to the air, beneficial microbes die off, etc.) and you lose the natural soil structure. I'm very inclined to use some of the methods I've read about. However, knowing that it is very traditional for farmers to till the land before planting, I want to know why? There are a few things I can guess at such as aerating the soil, mixing in cover crops or old vegetation, and mixing in fertilizers. Is there anything more to this? Why, really, do farmers till?
