How do I make sure that flower aren't pollinated by another plant

OK, I garden and propagate and divide but I know diddly about how to make sure that when I save seeds that they are really going to come true. I know so little about this that I don''t even know how to ask the question correctly.
This year I bought some seeds for bush tomatoes and I would love to save seeds from them so that I don''t have to buy year after year.
These are the varieties;
Bush 'Beefsteak'
Bush 'Goliath'
Bush 'Early Girl'
I bought them from Totally Tomatoes and I know that 2 of them are hybrids.
I do know that I read somewhere about bagging the flowers.
