I have never tried peppers but had good luck with sage so if I was going to try I would have to use the not so tender portions of the plants. Anytime I have used a tender portion of any plant they wilt and die. If any part of the plants are near the ground I would try to cover that portion with soil and wait to see if you get any results.
For me if I was going to increase the number of pepper plant I would use seeds for over all best results. There are plenty of people on this site who have more than enough seeds. I sometimes buy those packages of dried peppers you find in the Mexican food section and they all have tons of seeds in the packages and the cost is much less than buying them from the seed companies plus you get a few thousand seeds to share or plant. When I buy ripe bell peppers I always save the seeds, I have even just thrown out the seeds into my garden bed and enjoyed the volunteer plants.

I have extra pepper seeds of a hybrid pepper variety but it's too late to start them, and I really wanted more plants of this open-pollinated variety. That's why I was asking about people's experience with pepper cuttings.

Anney, I do this all the time in early spring with fancy perinneals. I just buy one big expensive plant and take cuttings.

Why don't you try it and let us know? I wouldn't try to root in water or try a cutting that had less than two nodes.

I have taken pepper cuttings inside over winter and they have survived. I have a sterile grow-out from an unknown hybrid that I didn't want to lose, so I took a couple of cuttings in addition to digging the plant up and overwintering it. I also took cuttings off of a Lemon Drop plant that I started from seed too early and had to prune it as it was very leggy. I just cut 4" to 6" cuttings, stripped the lower leaves and put them in moist potting mix. I didn't "tent" them or anything, just kept the soil moist, not soaked, and eventually the cuttings started putting out new growth. Same basic procedure as tomato cuttings, but the peppers take a little longer.
There are many people at the Hot Pepper forum that propagate from cuttings. You may get more detailed info there. Good luck with your peppers :D

So you've done it that way. That's good to know. I didn't post on that forum but did do a search of it and THAT's where I ran into the "complicated" business. I think it was someone who likes to air-layer plants and was showing how, rather than claiming that method was required. It was in a thread where the OP just wanted to know if she could put a cutting in a glass of water to root it. It took off from there! And yes, tenting the cutting was recommended in a post or two, again maybe just something someone does who takes special care of their cuttings.

Now, to let my seedlings get big enough to take a cutting from and hope they survive...
