Amaranthus Caudatus blooming too early?

I'm growing some Amaranthus Caudatus (Love Lies Bleeding) for the young leaves, the grain and of course for the ornamental qualities. My first question is, has anyone grown this variety and had a successful grain yield?

I started them indoors and transplanted out after about 8 weeks - they might have gotten a little root bound but didn't really show any serious symptoms of it. They started blooming around week 7 when only about 8-10 inches tall. Is that normal? If I want to encourage lots of new growth, would it be a good idea to pinch off the blooms?
