Southern pea question

I'm pretty new to vegetable gardening (2nd year). Last year I tried to grow green beans (bush and Pole) but most of the flowers didn't set and just fell off I think due to the high heat we had here in Austin. This year I was planning on growing some southern peas (pinkeye and red ripper) in a hope that they will still set peas when the temp start warming up. Is this logic flawed? Also if you pick a southern pea when it is immature can you eat the whole pod as if it was a green bean or is it super tough/taste bad?
