'Seed' potatoes v. potatoes that you saved from last year

Could someone PLEASE explain to me the exhortation to only plant genuine "seed" potatoes?

"Seed" potatoes would be the potatoes that you get from the rural grocery store in the spring, or order, that are full of eyes and are supposed to grow "true."

Well, what about some potatoes that I harvested from my garden last fall from these "seed" potatoes that I don't want to eat because they have big green spots and are developing eyes?

I don't know, but would expect that they would be clones of the original Yukon gold seed potato. Can't I just plant these?

It's something I've been struggling to really understand for years.
