A question about annuals in general

I know that annuals will die off at the end of the year and then grow back from seeds left by the old plant. If I kept annuals in a pot and moved them in before the weather turned cold, would they continue to live? Or does the weather have nothing to do with their life span?

This may sound like a stupid question but I'm new to gardening. I've learned a lot but I am mostly a veggie gardener.

I am mainly asking this because I have some annual herbs I've grown in pots and I don't know if I need to pick them and use and/or dry them now or if I could just bring them inside during the winter so they can keep living.
