Low Maintenance Veg: Plants, Practices, Tips

In addition to raised beds in the backyard, I plan on gardening a 100'x25' plot provided by the county to residents. Veggies that need frequent harvesting, maintenance, watering will be put in the raised beds at home.

What do you fine people suggest as good crops that are low maintenance that I can plant in the large garden plot? (my wife loves to cook and preserve) I have already decided to do tomatoes.

Also any ideas on practices to keep the maintenance down?

At this point I plan on using lots of mulch (maybe even polyethylene) to keep the weeds/watering to a minimum.
