What to do with bulbs until planting time?

Two questions:

First, WHEN IS PLANTING TIME?

When I try to research when my planting time is in Zone 8, it says between October-December. Really?! Theres that much of an allowance? Autumn nights here are cool/cold and days are warm/hot. What if I plant in October and they sprout because of the warm days?

Okay, Secondly, I just bought tulips, daffodils, crocus, and iris bulbs. Its August. Im not supposed to plant until October-December :) What do I do with them between now and then? I've heard refrigeration, but thats really cold! When I take them out of the fridge in Oct-Dec and plant them, won't they say "Whoooah, warm weather! Must be spring - lets sprout!"

Its still up in the 70's here in November which is warm compared to the fridge.

Sorry for all the questions but Im a lone gardner with no friends, family, or neighbors that garden and so no one to teach me. I tried reading googling for bulb info but I was only able to find the basic stuff.
