quick! help! caladiums

I bought a few caladiums bulbs (tubers?) & set them on peat in order to make the eyes swell so i knew which way to pot 'em. I read to do that here on this site. But i waited too long & the bulbs have roots & sprouts growing. I happened to place all the bulbs on the peat so the root side was on the peat. I understand when i plant them that the root side is supposed to be facing up. But since i waited too long to check 'em, the sprouts for the leaves are now growing the wrong direction. If put the bulbs in the pot with the roots up, the sprouts will be growing down! I hope this makes sense. Should i just plant the bulbs with the root side up & eventually the leaves will grow the right way? UGH! Why do the bulbs get planted with the roots on the top anyway? That seems upside down to me.

Also, there were 2 small knobs that broke off the bulbs during shipping. They haven't done anything while setting on the peat. Do they have life? Should i plant 'em anyway?
