Sweet Peas for Wedding

Hi I am planning on planting my own sweet peas for my wedding. I am planning on starting them in doors around St. Patties day next year. My wedding will be end of May/June (not set yet- hoping for memorial day weekend) and I am wondering if planting on St Patrick's day will give them enough time to bloom adequately for my wedding.

It will give them almost 80 days from seeding to flowering, and I read that, on average, they take 50 days to bloom. Will that be too late- or will they continue to bloom until its too hot for them to grow any more. If that is the case, about when in southern MN do they stop flowering?
