IMO get better lighting before choosing anything else . That lighting you have is useless and no amount of paint will help that . I like all LED 4000K so maybe try that and if a bit too bright then 3500K that IMO is as low as you go everything lower will add a yellow cast to everything you choose .
I’m confused - for me there are too many pics at not the right position for choosing. Need pics like the 1st one showing each of the 4 choices alone with the floor, lower & upper cabs & with BS choice upright against back in the actual position in which they’ll be viewed. Are 2 of the choices glass, the other 2 tile? Do you have under cab lighting? How much counter space is in this kitchen - that makes a difference in level of ’busyness’. What color grout are you thinking? Your counter looks very different up close & from a distance. Up close, the herringbone & hexagone samples feel too busy with the speckled counter. The solid gray glass (?) sort of subway style - 1st one on left in first pic of the 4 laying flat might be my pick bc it’s more simple. The very last pic of subway style standing against splash looks like a totally different tile than any in first pic. A couple of the pics make tiles appear to have pink tones in them! This is why the picture array is confusing to me. I’d delete all your pics except 1st one, then post a pic of each one individually standing against splash- in the same order as they are laying on counter. I’d be curious if any who’ve already picked one change their pick.
Plain white rectangular splash allows the blue to predominate:
Larger white rectangular tile with a more undulating surface and slightly gray grout:
However, you don't have to stick with a white or neutral tile. Don't be afraid to go bolder with a backsplash--try a pattern, a color, or a handpainted tile. Stay away from the big box stores and go to a dedicated tile store. You'll find a lot more interesting products.
Here's a tile with a subtle pattern:

Gorgeous blue tile backsplash!

Here's a blue hexagon:
These hand-made, hand-painted tiles are wonderful!
In my modest size kitchen I have granite and cutting board surfaces. The laminate by the sink will be granite when we upgrade the cabinets below. I realized that I dont actualy mind the laminate
(I think black helps), its fantastic by a sink.
I would put something (whether built in or credenza) along that whole wall where tv is now, until I got to the windows. The windows define the space imo.
What a beautiful living room-dining room. No wonder you want to be careful how you introduce a large TV, now that you’re jettisoning the armoire. I’ve long admired approaches that involve hiding even large TVs in plain sight. One of several online roundups is at https://www.purewow.com/home/how-to-hide-a-tv
Add some walls - you may need a professional carpenter. Open concept houses were never a good idea. Add walls.
