Absolutely you can, and many tall people do. I think the only thing to really consider is whether you'll only be in the house a short time and need to worry about resale; otherwise, do the kitchen and bathroom counters taller, and raise the height of the upper kitchen cabinets to where they're comfortable. I agree on the taller ceilings as well.
I have seen kitchen articles where homeowners went with 40” counter heights. If the cost of custom extra-tall base cabinets becomes prohibitive, consider putting the cabinets on top of drawer bases. Toe space drawers are very handy for flat items like placemats, tablecloths, platters, and such. Get them with push-to-open drawer slides where you just quickly press inward with your toe and release and the drawer pops open.
Looks like a modern art collectors home. I'm terrible with color but tried to push it even further.
The three windows shown look perfect; it's a nice balance of space. In addition, if you did four you would have the division between windows right in the middle of your sink so you'd be looking at that instead of out a window.
My kitchen sink wall has 4 windows. They don't look cramped at all even though they essentially stretch across the entire section of wall there like your design. More light is better.

Possibly a mass of a flower called cockscomb, or a geranium.
I'm in zone 5 I think A, I remember it getting down to -16 F one year. We have tons of Azaleas here and they were blooming like crazy and some still are.
Could it be a laceleaf weeping Japanese maple that's red in spring?
