I like Patricia’s idea of floor to ceiling storage with lighting and a glass door. Also the wine fridge idea is a smart one.
A closet is not the right place to store wine.
Either have a temperature-controlled space for it, or admit you want to show off the wine you have. In that case, several wine display racks can be considered and they can be mounted directly to the wall.
I have a few questions...
What are the dimensions on the interior of the closet? width x depth x height
Are you willing to match the height of the adjoining door?
How many wine bottles will be stored?
Do you want to store anything other wine related items in the closet?
I think it’s pretty and unique! Try removing everything and adding nice art over it see if that helps.
Makes sense you would want something leas formal feeling in a family room. Can you show pics of the rest of the room? I still think you cam leave the fireplace
as is and style it in a way that works for your more casual space. What is the vibe of the rest of your furniture and aesthetic?
The style of your fireplace can work with just about any style. With a different fireplace screen and mantel decor it can look quite attractive leaving it as is, leaves and all...

Is the ceiling in your shower bath pecky cypress?
It is pecky cypress! We have it throughout the house (original) so we have added some extra touches to our hallway/stairwell and inside the bathroom at the top of the stairs.

What did your contractor say? Have they even attempted to remove the grout from the surface of the brick? The problem is in the way the grout was applied and removed. Get them in there to try to rectify this situation.
It is so apparent that the grout is what changed the tile color. I can't see how trying new grout color will help this without the old grout being removed ( if it even can ) .
Bring these people back to your home now. The more time you waste here , the less likely they will want to help you.

@Nancy in Mich, that is all well and good by the real issue from what i hear is the thick globbed mortar joints, which really changed the look more than the brick color.
A gazebo might be nice out there. I love gazebos.
Do you have kids? You could make that a play area. Remember turf can be hot in summer.
Regarding the flooring you posted I would look for something more natural in color. Not gray
Can you also post pics of your kitchen? Am I correct that you are going to be using the same flooring in there too? You can't make these decisions in isolation.
You can put enough paint on those walls to change the color, but the texture will remain, which is why I suggested changing to drywall.
My parents built a house in 1977, when paneling was all the rage. When she tired of the paneling, she painted over it - below you can easily see the wood grain (which was not nearly as pronounced as in your basement)

Have you looked at laminate. The new laminates are a huge improvement from your 30 year laminate and reasonably priced.
Yes and the laminate is only a couple hundred dollars less than the quartz so we opted for quartz.

Yes, I like the mint color. :) It looks like they are not making the mint color in the small size anymore so I don't think I can use it on the island. I wish I had bought two now. I ordered a white blanco sink, but the white is too white for my matte porcelain counter that is going in. Luckily, I can return it. I guess I am left with ss, green kohler or there is an ice grey in the small sink that might look nice. I would put some colorful stuff on the island.
Just to update that I met with the cabinet co. and I am doing the prep sink in the same material that the porcelain counter is made of. I am going to do this for the laundry sink as well (I hope).
I agree with Jan. I’m guessing the dead spots might mean you have a dog. You may want to get rid of the lawn altogether. Can we see the whole yard?
Curious how much distance are we talking of fence line and out from fence?
I have used athletic fields surronded by fencing, there is a border, caused by herbicides, clean look.
