Honestly, I would remove all the crown. If your cabinets go to the ceiling, I'd finish them with a very simple crown on those cabinets and leave the rest of the walls with none. The only rooms I have crown are my formal dining room and formal living room (which no one ever sits in).
I'd leave the crown. It's not overly ornate, just regular basic crown and will look absolutely fine with shaker cabinets. I've got the same crown with my shakers. Just paint it out the same color as the cabinets and leave the rest white. You won't really notice the transition.
