I am Italian, from Calabria. I came to America when I was nine. I used to live in Chicago, but my job took me to Madison, Wisconsin.
I have a 3/4 acre lot with a 15 X30 garden, seven fruit trees, and a grape vine on a trellis, (and a variety of non fruit trees.
I regularly make Italian sausage and capicollo (usually the end of February/beggining of March, when the whether is still cold but not cold enough for meat to freeeze in the garage); dry cure it in the garage, and after about 8-10 weeks, store it under oil to finish cusing.
