So, for many years, after harvesting my 1015s, I set them aside for a few weeks for the stems to dry, and then trim those dried stems to a 4-6 inch length, and string them up. But I'm wondering to what extent this stem drying is necessary for long-term storage. If I just cut the green stems off and pile the onions up, will they last as long? For example, store-bought onions already have the stem removed, and they last a long time. But did they dry the stem before doing that?

Yes, that stem is necessary... at least for good storage. Onions need some time to dry and cure. Leaving that stem on helps control the cure. A good cure helps with good storage. If you cut the neck too close, it can cure improperly and lead to rotting faster.

Some gardeners will cure without topping at all and braid onions after the cure. I don't' see it a lot, but sometimes.

Yes, commercial growers leave the stem on. Usually it's windrow, topping, then curing before processing. Often onions are field dried, especially in fine dry areas so long as it don't get too hot. Some areas or farmers may use indoor racks or forced air curing if they need to.

Thank you. That's what I was thinking, but it's good to get informed confirmation. The issue is whether onions can cure WITHOUT the stem left on. I was figuring that if you just slice the stem off immediately after harvest, the moist onion fruit would be immediately exposed to the air, which probably isn't smart.

By "topping", I presume you mean leaving the stem on, but cutting it to a more convenient length. No question that leaving the stem full length takes up more room during the cure, but that's what I usually do, and then I trim it AFTER the cure is done and the stem is entirely dry. I either cure with everyone spread out on paper in my shed outdoors, or in my converted garage. The humidity is somewhat lower in the latter. In both cases I have a fan to do good air circulation. Field drying won't work in my situation. Our spring is usually pretty moist.

No matter where you live in the South, sweet onions are not storage onions and do not keep well at all. May have to consider the crawl space or another freezer. With a family of 5 it really pays off when veggie prices are low in the summer and high in the winter and shipped in from who knows where. Besides, cooking with your homegrown frozen-fresh veggies is a taste you can't duplicate from store-bought. I made a huge batch of the crockpot carmelized onions with some of the white onions. I'm going to freeze it in meal-size batches. I don't usually make onion soup, but it looks like it would make a good gravy or stew base. I have the Small Batch cookbook, but haven't looked up the recipe for the onion relish. Would have to check the tested recipe against what I made, but probably can't use it for canning. I also put 10 bags (1 cup each)of chopped red onions in the freezer. The dehydrator has a batch going with red onions. I still have my yellow onions to prep. I will probably store as many of those as I can, using knee high hose with a knot tied between each one. I hang them in my pantry. Last year they lasted for months. I ran out just about the time they were starting to get soft. Thanks for all the advice.

At Target recently I bought white plastic 'reOrganizables' (house brand) medium size bins with holes in sides that have a gray piece in handle that allows optional stacking. Not expensive $3.59 and very washable. I would guess one would hold 5 lbs or more of spuds. By stacking them, I hope to avoid the "nasty one on the bottom" syndrome. I also brought home for evaluation a black bin with sides made of plastic circles (air spaces between them) which was even cheaper at $2.50. Also comes in white. This would serve the purpose well--it's taller than the other style but has same footprint. But until my pantry is done, my spuds are in a long, thin handleless garage sale willow basket that disappears when set on my new mottled countertop. I rather like it and it's very convenient.

I find that Candy stores until Christmas. I have some Highlander sweet onions that are going to keep better than Candy. I planted a 'longer' keeping onion [Copra] but it did not keep much better than Candy. I am going to plant some more sweet varieties as a trial. I think that I have planted 1015Y successfully in the past. Many years ago I raised a variety. I am guessing it might have been Southport Yellow Globe. It was the tastiest and a spicy onion...a bit strong though.

Yes, topping is cutting the extra off, but leaving that 4-6 inches like you are currently doing. If you sliced off the entire stem immediately after harvesting, the onion would dry uneven, improperly, leaving too much available to rot instead of cure into a nice dry seal.
